4 Essential Father’s Day BBQ Tips

Thursday, June 14th, 2012

Are you planning on having a Father’s Day BBQ? If yes, Kloby’s Smokehouse is here to help you make your Father’s Day weekend BBQ a huge success! Read now for a few smashing BBQ tips!

You have the perfect weather for this Father’s Day weekend. Now you just need the best BBQ meal! Here are just a few tips to follow before you start the grilling:

Have Good Cuts of Meat

When having a BBQ party, you want the best cuts of meat you can possible buy. You can customize any cut of meat. Locally raised meats are the most flavorful option you can obtain.

Be sure to grill all your meats with the bone and skin on it to make sure you get the best flavors from them.

Prep Properly Before Grilling

Before you start to grill this Father’s Day Weekend, be sure to use an oiled rag to clean and lubricate your grill prior to cooking. Your meat should be lightly oiled but do not oil it so much that it will cause huge flames.

The meat should be evenly salted so that flavors come out perfectly while your meat keeps its natural moisture. This will leave your meat perfectly browned as well.

Let Your BBQ Smoke

The best BBQs are the ones that are turned into a smoker. You can have your very own smoker by turning your BBQ to the lowest setting and putting a tray of hickory or apple wood chips on the bottom shelf. Make sure the wood chips smolder so they don’t ignite. Wild sockeye salmon is great to smoke for Father’s Day.

Keep It At Room Temperature

Before you grill, make sure all meats are at room temperature and once put on the BBQ, do not constantly move and pick at it.

The best BBQ meats are the ones with a nice char or crust on it. If you wait right before serving to cut the meat, you will retain the most juices and flavor from your meat.

How To Spot Out An Awesome BBQ Restaurant

Friday, June 8th, 2012

Are you looking for a great Barbecue meal and want to eat out at a restaurant? If yes, you need to learn how to choose a good barbecue restaurant. Kloby’s Smokehouse is here to help you pick out a good BBQ restaurant joint with a few tips on how to spot a great place to eat.

The following are some signs to look for the next time you have a craving for a delicious BBQ meal:

Look Carefully At The Building

If the restaurant looks like a shack with a few funky colors, don’t be alarmed. This is the first hint you have picked a good place to eat. Usually the place will emphasize the possession of the BBQ restaurant with ___’s BBQ to signify the roots of a homemade cooking style and sauce.

The Décor is Awesome

When you see cool stuff on the interior walls, you know you’re ready for a good eat! The wall decoration can’t be forced or thought out…it has to be natural.

Look for trophies that advertise how tasty the food is at the BBQ joint. Look for BBQ swag like t-shirts and caps. If the restaurant has shirts, you know customers are saying good things about it.

See if the place has local and internationally known celebrities making recommendations because they wanted to eat here and not based off of a requirement to endorse the BBQ restaurant.

Last but not least, check out the menu. The menu of a great BBQ place is usually pretty simplistic. You may see one to three types of BBQs and the menu should allow you to eat breakfast, lunch, dinner and dessert with BBQ included.

If you’re ready to pig out at a great BBQ restaurant, come to Kloby’s Smokehouse. View our delicious menu here.

How To Make Traditional Bacon / Sausage and Eggs and Toast

Did you know you could grill your bacon, sausage, eggs, and toast? You can! Preheat the grill and cook your bacon/ sausage and eggs. Toss your toast with butter.

You can add ham slices in muffin tins and top with a mixture of beaten eggs, salt, pepper, ¼ cup milk, chopped onions and peppers. Top the mixture with shredded cheese. Place the muffin tin in an aluminum pan with ¼ cup of water and cover the pan with foil. Cook low heat until egg set. It is approximately 45 minutes.

The next thing to do is make some BBQ fruit to get your morning started right. Mixed fresh fruit is always a health choice to grill. Use firm fruits like pineapples, pears, apples and bananas. Cut the fruit and soak it in water so that it can absorb as much liquid as possible and stay juicy while grilling. Cover the fruit in cold water and pure lemon juice.

The fruit should soak for 30 minutes. Add ice to keep the water cold and cinnamon to the water to give your fruit a spice flavoring.

Here are some other breakfast food you can have from the grill:

-Carolina Frittata. Open-faced omelet filled with pulled pork, home fries, and cheddar jack cheese, drizzled with Carolina BBQ Sauce, grilled Texas toast.

-Chipotle Brisket Burrito. Smoked Beef brisket, eggs, home fries, grilled peppers & onions melted cheddar jack cheese, topped with chipotle BBQ sauce.

Making Healthier BBQ Sandwiches

Thursday, May 24th, 2012

Are you looking for ways to make your barbecued beef or chicken less greasy, while making it healthier? If yes, Kloby’s Smokehouse is here to give you tips on how to keep your beef or chicken delicious while keeping it as healthy as possible.

For starters. You can make your BBQ beef or chicken less greasy by thoroughly draining your ground beef or chicken in a colander. Once you are done draining, blot the meat with paper towels or rinse the meat with hot water to eliminate additional fat. If you are using shredded meat for your BBQ beef, make sure you discard any visible fat prior to shredding.

Here is a healthy but tasty recipe for Chicken BBQ Sandwiches:

To make delicious and healthy chicken BBQ sandwiches you will need 4-5 boneless, skinless chicken breasts, 1 medium yellow onion, chopped, Kaiser buns, finely shredded green cabbage, 3 cups of homemade BBQ sauce.

Place your chicken breasts into a pressure cooker for moist chicken.

Next, sauté chopped onion in pan until it is translucent. It usually takes about four minutes. Shred your cabbage in a food processor. Toast your buns with your broiler pan face up for 1-2 minutes. You want to toast your bread well to prevent your BBQ from getting soggy.

How To Plan A Great Menu For Your Graduation BBQ Party

Wednesday, May 16th, 2012

Are you throwing a graduation party for your new graduate? If yes, there is no better party to throw than a BBQ grad party. Read now to learn a few tips on preparing for a fun and memorable party.

For starters you need to find out about your grad’s favorite foods. Once you know these food groups, you should plan out five to seven different menu items. The most common mistake made at grad parties is serving too much food.

To keep food quantity at a reasonable level, be imaginative rather than sticking to the same food.  For example, if your graduate loves pizza, serve pizza. Pizza gives you the chance to mix it up by serving unique gourmet pizza as well as standard favorites, cheese and pepperoni.

Serve common BBQ favorites of smoked pulled pork, beef brisket, ribs and chicken. Serve BBQ sandwiches, coleslaw and baked beans. There is nothing more delicious than BBQ from a professional BBQ caterer.

Best of all you can hire a caterer to make these meals for you. Once you have a theme the caterer will help you maximize the opportunity to find foods that fit that theme.

Memorial Day is the prefect way to get your summer off to a great start. It marks the beginning of summer and you should want to have an event that will have friends and family talking about long after winter of the great food and fun they had at your memorial day BBQ.

Before you even think about the menu, make sure you have the gear and equipment to be the best chef you can be or at least look like the best chef on the face of the planet.

You can do this with the right kind of apron. Your apron can be a standard white color or you can choose a solid color. No matter the choice of color try to have a fun design people will talk to you about during the party.

Next, try you hands at making fresh lemonade from scratch. Yes, it is an extra task but there is nothing like giving guests fresh lemonade to welcome the summer. All you will need is 1 cup of water, 1 cup of sugar, four to six lemons to juice and four cups of cold water.

Blend the cup of water and cup of sugar in a small saucepan. Bring this mixture to boil and frequently stir until sugar dissolves completely. Store your lemonade in a glass pitcher to refrigerate a few hours before the party. If you want some fizz to the lemonade, use sparkling water.

To make sure the lemonade does not become watery, freeze some of the juice in ice trays to use during the party to keep the lemonade cold. This mixture serves six people a pitcher.

Next, start thinking about how you will want to set your table. Make sure you use a bright tablecloth to give a summer feel and don’t forget clamps to keep the tablecloth on your outdoor table. Once you know the theme of your party, you can start planning out your BBQ menu.

The BBQ Menu

For a BBQ, there really is no restriction to what could be on the menu. You can BBQ meat, fish and fowl. You can BBQ cabbage stuffed with bacon and onion.

Some summer BBQ favorites are as followed:

-        Carolina Style Pulled Pork

-        Smoked BBQ Chicken

-        BBQ Ribs

-        Beef Briskets

How To Have a Successful Pig Roast

Thursday, April 19th, 2012

There is no better way to have fun outdoors during the spring and summer months than having your own pig roast. It is a wondrous event but roasting a whole pig can be a very challenging task. Kloby’s Smokehouse is here to help you pull it off successfully by providing you a few tips on how to cook a full size pig. Read to start preparing for your pig roast.

When roasting a pig, you will need special equipment and skills to cook it the right way. The pig has a great deal of meat on it. It will need to be cooked well to be safe for eaters.

On average, suckling pig is less than 25 pounds. A whole hog weighs about 30 to 60 pounds. A large hog will weigh about 100 to 200 pounds. To roast any of these pigs you will need a heavy duty and sturdy rotisserie. The rotisserie will slowly and safely turn your pig roast over your fire.

How To Buy Your Pig For Roasting

When buying a pig to roast, you want it to be as fresh as possible. You can special order a whole pig in advance. If it is frozen when bought, you must defrost it 48 hours before roasting. You want all the time you will need and a little extra. Also remember if your pig is not prepped for cooking (hair and internal organs removed), you will need to clean and prep the hog prior to cooking.

Once you have your pig, it is time to have some fun. You will need to flavor your whole pig by marinating and brining it.

Brining is when you use salt water solution to tenderize meat and keep moisture in muscle fibers. With marinating and brining you will infuse flavor and keep your pig roast succulent and moist.

If you don’t have the time or patience to roast your pig, let Kloby’s Smokehouse get the job done well. We offer whole smoked pig, Carolina style pulled pork, pork BBQ ribs and more.

Overcooking or undercooking your meat is the last thing you want to do for a big, festive event. Guarantee that your Pig Roast party is a success by hiring Kloby’s Smokehouse as your professional BBQ caterer.
