Tuesday, April 24th, 2012

Memorial Day is the prefect way to get your summer off to a great start. It marks the beginning of summer and you should want to have an event that will have friends and family talking about long after winter of the great food and fun they had at your memorial day BBQ.

Before you even think about the menu, make sure you have the gear and equipment to be the best chef you can be or at least look like the best chef on the face of the planet.

You can do this with the right kind of apron. Your apron can be a standard white color or you can choose a solid color. No matter the choice of color try to have a fun design people will talk to you about during the party.

Next, try you hands at making fresh lemonade from scratch. Yes, it is an extra task but there is nothing like giving guests fresh lemonade to welcome the summer. All you will need is 1 cup of water, 1 cup of sugar, four to six lemons to juice and four cups of cold water.

Blend the cup of water and cup of sugar in a small saucepan. Bring this mixture to boil and frequently stir until sugar dissolves completely. Store your lemonade in a glass pitcher to refrigerate a few hours before the party. If you want some fizz to the lemonade, use sparkling water.

To make sure the lemonade does not become watery, freeze some of the juice in ice trays to use during the party to keep the lemonade cold. This mixture serves six people a pitcher.

Next, start thinking about how you will want to set your table. Make sure you use a bright tablecloth to give a summer feel and don’t forget clamps to keep the tablecloth on your outdoor table. Once you know the theme of your party, you can start planning out your BBQ menu.

The BBQ Menu

For a BBQ, there really is no restriction to what could be on the menu. You can BBQ meat, fish and fowl. You can BBQ cabbage stuffed with bacon and onion.

How To Have a Successful Pig Roast

Thursday, April 19th, 2012

There is no better way to have fun outdoors during the spring and summer months than having your own pig roast. It is a wondrous event but roasting a whole pig can be a very challenging task. Kloby’s Smokehouse is here to help you pull it off successfully by providing you a few tips on how to cook a full size pig. Read to start preparing for your pig roast.

When roasting a pig, you will need special equipment and skills to cook it the right way. The pig has a great deal of meat on it. It will need to be cooked well to be safe for eaters.

On average, suckling pig is less than 25 pounds. A whole hog weighs about 30 to 60 pounds. A large hog will weigh about 100 to 200 pounds. To roast any of these pigs you will need a heavy duty and sturdy rotisserie. The rotisserie will slowly and safely turn your pig roast over your fire.

How To Buy Your Pig For Roasting

When buying a pig to roast, you want it to be as fresh as possible. You can special order a whole pig in advance. If it is frozen when bought, you must defrost it 48 hours before roasting. You want all the time you will need and a little extra. Also remember if your pig is not prepped for cooking (hair and internal organs removed), you will need to clean and prep the hog prior to cooking.

Once you have your pig, it is time to have some fun. You will need to flavor your whole pig by marinating and brining it.

Brining is when you use salt water solution to tenderize meat and keep moisture in muscle fibers. With marinating and brining you will infuse flavor and keep your pig roast succulent and moist.

If you don’t have the time or patience to roast your pig, let Kloby’s Smokehouse get the job done well. We offer whole smoked pig, Carolina style pulled pork, pork BBQ ribs and more.

Overcooking or undercooking your meat is the last thing you want to do for a big, festive event. Guarantee that your Pig Roast party is a success by hiring Kloby’s Smokehouse as your professional BBQ caterer.

Catering Options: BBQ Brisket

Smoking a BBQ Brisket.

Are you craving a barbeque (BBQ) Brisket? If yes, we are here to satisfy your craving by giving you a few pointers on how to BBQ your brisket. Learn now.

What is A BBQ Brisket?

The BBQ brisket originated in Texas and a brisket is a beef cut from the breast of a cow. It is a great alternative for a BBQ party for guests who prefer not to eat BBQ pork. Brisket is a tough but very flavorful cut of beef, making it perfect for low and slow BBQ cooking.

When you are preparing your brisket for cooking, you need to first clean and pat it dry. If you prefer, you are more than welcome to trim the fat cap. It is perfectly fine to keep the fat on your brisket because it will prevent it from completely drying out as it cooks (fat also helps maintain the flavor in your brisket).

Your brisket will need to be smoked, so it is wise to place a drip pan under the meat so you may use the drippings to create a sauce for the BBQ.

Some ingredients you can use to season your BBQ brisket are onion powder, garlic powder, black pepper, smoked paprika, salt, sugar, dry thyme, dry mustard and cayenne.

You must marinate your brisket prior to smoking it. A smoker should be heated from 225 to 250 degrees. It will need to cook for 6 to 8 hours.

For the best BBQ brisket in town, hire Kloby’s Smokehouse.

Overcooking or undercooking your meat is the last thing you want to do for a big, festive event. Guarantee that your BBQ party is a success by hiring Kloby’s Smokehouse as your professional BBQ caterer.
